Blueberry Crumble Muffins


My fridge has been overflowing with fresh blueberries for a few weeks, which prompted me to make batch after batch of blueberry muffins that my family gobbled up. I got a little fancy with the last two batches and topped the muffins with streusel... My result is a perfect summer breakfast or on-the-go snack.


I work the butter into the streusal with 2 knives.

1½ cups flour
1 cup oats
¼ cup brown sugar
1 tbsp baking powder
½ tsp salt
½ tsp cinnamon
1 cup milk
1 egg
3 tbsp canola oil
1 cup blueberries

Mix dry ingredients together in one bowl; mix wet ingredients together in another bowl. Combine wet and dry ingredients, don't over stir! Fold in the blueberries. Spoon into greased muffin pan and then sprinkle on streusal topping (below).

Bake for 25-30 minutes at 425°F.

½ cup brown sugar
2 tbsp softened butter
¼ cup oats
¼ cup flour
1 tsp cinnamon

Mix ingredients together. Using two knives and cutting in opposite directions, work the butter into the mixture until it resembles small crumbles! 


P.S.- I had to put foil over them halfway through baking so the streusal wouldn't burn.
